Billing for just copays

I want to  bill and collect only client copays through Simple Practice, not the full service amount nor the insurance companies. How can I do that?

  I have been doing that but not sure if I'm doing it the right way. I've been entering the insurance rate as $0. Would love to hear what others are doing.
