Way to hide 'sex' for insurance billing on non-binary client profiles

For clients who are non-binary but use insurance, how can I input their 'legal sex' for claims and then hide it for all other situations? When I input the 'legal sex' for claims purposes, it now always pops up with other demographic information. This is not accurate demographic data for the client - it is just a legal requirement for the client to use insurance. (It shouldn't be required to file claims to begin with.)
