How to allocate client payments

I have a client with an outstanding bill who is making monthly payments to pay it off. The payments are not for a specific date, since the payments are not the same as the cost of a session. Since the updates to the system, I can't seem to figure out how to charge this client their monthly payment without charging them the full amount due or the full amount of a specific session.

  Yes, this is a huge problem. I've not been able to figure out how this new update works. If you can turn the update off for individual users. I'd opt for that solution!
